What Does it Mean?

As a professional cake artist, I know what certain cake terms mean. I also understand that non-cake people may not know the meaning of these terms or have certain terms confused. So, I hope clarifying a few of the most often used terms helps you with choosing what you'd like for your cake etc:                 
Layer: This means the number of cakes within a tier separated by filling. In an approx. 3.5 - 5in tall standard cake, this is often 3 or 4 cake layers with 2 or 3 layers of filling. 2in tall sheet cakes and shaped pan cakes are 2 cake layers and one filling layer.                                                                         
Tier: This is the total number of layer cakes that goes into making up the servings in your cake. For 28 servings or more this can start at 2 cakes stacked together, but we can do cakes for quite a lot of people in just a single cake too.                                                                                                             
Fondant: This is a sugar dough that can come in any colour, and is rolled into a sheet to cover cakes. This, in our opinion, gives the best looking cakes. We use a layer of buttercream under our fondant for a superior finish and extra flavour (vegan cakes will have vegan buttercream underneath).                           
Standard Buttercream: This is a whipped icing consisting of butter, icing sugar, flavouring and colour if desired. It is not a good choice in warm weather as it has a fairly low melting point (except as a filling). We only use this icing as a filling, with the shaped novelty pans or to top cupcakes. This can also be made in a vegan version.                                                                                                                                                                                               
Meringue Buttercream: This is a buttercream made with a feather-light, cooked meringue base, then butter and flavouring are added. Silky smooth in the mouth and a lot less sweet than standard buttercream. I all my buttercream layer cakes (except for vegan cakes) in this icing. This icing cannot be successfully coloured very dark colours, so if you wish a deep coloured icing, please choose fondant. Again, this is not a good choice for warm weather cakes (except as a filling).                                                                                                                                                                                              
Ganache: A mixture of chocolate & cream, used either as a filling or as a cake covering. Yet again, this is not a good choice for warm weather cakes (except as a filling).
